TRIPLE CREAM BRIE
This cheese has a delicate white bloom on the outside that hides a deliciously rich, creamy and silky centre. We look to a number of local dairy farms on the Sunshine Coast to source the best milk, before adding cream to create an exquisite and decadent taste experience, reminiscent of a particular time and place. This cheese is perfect to feature on a cheese platter, in a meal or on its own. Our favourite way to use this cheese is by slicing it onto a crusty baguette along with fresh basil and plump, ripe tomatoes. If you fancy a drink to go with, champagne will turn this wheel into a celebration. The bubbles act like a palate cleanser, cutting through the gooey goodness so that each bite feels like you’re trying it for the first time again. All our cheeses are made using traditional methods, by hand, on our property in Woombye. We are authentic and passionate about creating a true artisan product. This cheese features a buttery. melt-in-your-mouth goodness that gets more earthy as it ripens. It is voluptuous to the point of having delicious, indecent effects! Enjoy it with friends because we are all about creating memories in every mouthful.

BLACKALL GOLD – WASHED RIND
This cheese is surprisingly mild while young but develops a more robust flavour and aroma as it ripens. Read: pungent! The striking orange rind is a result of days of washing the cheese (yes, we wash it in a special brine to create the perfect level of funkiness!) If you want something that commands attention and will follow through on flavour, then this cheese will not disappoint. It’s bold, boisterous and unapologetic. Obviously, we don’t play favourites but this cheese comes pretty close. It’s our conduit to normalising stinky cheese which encourages more daring cheese choices and makes us do a happy dance. It pairs perfectly with a full-bodied wine that is strong enough to stand up to the characteristics of such a gutsy cheese. We also love to use this in our cooking by adding generous pieces to the top of Potato au Gratin. It melts down beautifully, spreading its meaty flavours throughout each layer. We are very pleased to say that this cheese took out the title of AUSTRALIA’S BEST CHEESE in 2023 and received a silver medal at the WORLD CHEESE AWARDS in Wisconsin in 2024. So you don’t just have to take our word for it.

Created using our Triple Cream Brie, our Ash Brie is carefully rolled in ash – resulting in a striking black and white appearance in addition to the rich and creamy centre.
