 Woombye Camembert Croque Madame – Serves 4


  • 8 slices sourdough
  • 20gr dijon mustard
  • 12 slices smoked ham
  • 1 Woombye Camembert


  • 50gr butter
  • 50gr flour
  • 600ml milk
  • 1 bay leaf
  • 1/2 bunch thyme
  • 3 peppercorns
  • 100g grated Woombye Cheddar
  • 1 tsp dijon mustard

 To Serve

  • 20gr butter
  • Sea salt
  • 4 eggs

Place the milk in a pot with the thyme, bayleaf, and peppercorns and bring to the simmer. Meanwhile melt the butter in a pan over a low heat. Add the flour and stir. Cook out for 3-4 minutes stirring constantly. Strain the milk into the butter and flour and mix little by little, stirring to combine at each interval. Stir till smooth. Fold though the Woombye Cheddar and the mustard. Season to taste. Leave to the side.

Lay out the bread on the bench and spread mustard on 4 slices, making sure to spread it to the edges. Lay 3 slices of ham on each of the mustard bread and top with the sliced camembert. Top with the other slice of bread. Butter the outside of the sandwich. Heat a pan over a medium heat and place the sandwiches in the pan trying not to over crowd. Do it in batches if necessary. Cook over a low heat until golden brown on one side. Flip over and finish in a 180 degree over to warm the filling for 3-4 minutes.

To serve
Fry the egg over a low heat in a non stick pan. Place the grilled sandwich on a plate. Cover the sandwich with a good spoonful of the béchamel. Top with a fried egg and enjoy.
