TRIPLE CREAM BRIE

This cheese has a delicate white bloom on the outside that hides a deliciously rich, creamy and silky centre. It features a buttery. melt-in-your-mouth goodness that gets more luxe as it ripens. It is voluptuous to the point of having delicious, indecent effects!

We look to a number of local dairy farms on the Sunshine Coast to source the best milk, before adding cream to create an exquisite and decadent taste experience. Our favourite way to use this cheese is by slicing it onto a crusty baguette along with fresh basil and plump, ripe tomatoes. If you fancy a drink to go with, champagne will turn this wheel into a celebration. The bubbles act like a palate cleanser, cutting through the gooey goodness so that each bite feels like you’re trying it for the first time again.

BLACKALL GOLD – WASHED RIND

This cheese is surprisingly mild while young but develops a more robust flavour and aroma as it ripens. Read: pungent!
The striking orange rind is a result of days of washing the cheese (yes, we wash it in a special brine to create the perfect level of funkiness!) If you want something that commands attention and will follow through on flavour, then this cheese will not disappoint. It’s bold, boisterous and unapologetic.

It pairs perfectly with a full-bodied red that is strong enough to stand up to the characteristics of such a gutsy cheese. We also love to use this in cooking by adding generous pieces to the top of Potato au Gratin. It melts down beautifully, spreading its meaty flavours throughout each layer.

CAMEMBERT

Delicate and smooth, our Camembert has a beautiful white bloom on the outside and a creamy, ivory centre. Despite it's rustic and earthy tones, it reveals a well-rounded aftertaste and soft finish, creating a layered tasting experience.

Camembert pairs with a range of fresh fruits such as apples, pears, grapes and berries (and a sneaky piece of dark chocolate). A drizzle of honey is always a welcome addition along with a glass of dry cider.

WOOMBYE ASH BRIE

Because our Triple Cream Brie is so spectacular, we decided to create another cheese from it! During maturing, when the rind is fluffy like a cloud, we carefully roll it in ash - resulting in a striking black and white appearance. The ash serves to lock in an undeniably rich and creamy centre.

Before plating up, be sure to gently rub the rind with some paper towel (or the inside of the cheese wrapper) to further reveal the depth of colour. When you cut it open, delight in the thin charcoal line that frames the paste to perfection.

TRUFFLE TRIPLE CREAM BRIE

This work of art begins as a Triple Cream Brie before it is cut through the centre and filled with the most decadent truffle tapenade making it a seriously indulgent cheese to both look at and eat! The truffle infuses evenly throughout the paste creating an 'over the top' tasting experience.

We love serving this before a meal. It's the perfect entree when teamed with charcuterie and chutney. If you want to serve it as the main event, simply add it to a pot of cooked pasta - it melts down beautifully and you'll have yourself a ready pasta bake in no time at all!

VINTAGE CHEDDAR

This Cheddar is vintage, meaning it is aged over 12 months, making it a delightful conundrum of sharp, smooth, tangy and creamy flavours. It's super reliable and comforting - perfect for toasties, pizza or a hard cheese offering on your platter.

A hoppy IPA is a winner with this cheese along with simple condiments like fig jam and lavosh. If that doesn't get your Sunday session kicked off then I dont know what will!
